Are you interested in the managed system side (Redfish service) or the client side? For the Redfish service-side, you can look at the Redfish Interface Emulator (at github.com/dmtf). This site also contains code to support client-side implementations (libraries, utilities), service-side simulation/emulation and conformance testing.
Finally, you can look at the OpenBMC project (github.com/openbmc). Redfish support was added in release 2.6.

There are a few things that we have available to might be helpful to you. The DMTF YouTube channel has several videos on the core topics of Redfish, such as general modeling practices, and different types of client workflows: www.youtube.com/channel/UC2MIRFVOvpOo_hMT-TQU4gg
Mockups found here would be a good place to see what types of data a service is likely to present: redfish.dmtf.org/redfish/mockups/v1. The "Simple Rack-mounted Server" is a pretty standard representation of a sever.
